Just what the story is with the information given by Boadicea is impossible to say. She shows his parents as John and Mary. Their marriage registration shows them as Jesse and Mary, but also the 1861 census, taken while George was a child, shows them as Jesse and Mary. Also, it shows them as being born in Canada West (or Upper Canada as it would have been at the time) and with the Cornells of Beverly by this time, this would surely be correct. George is shown as being in Canada 26 years in the death registration, but in fact he would have resided in Canada for life.
